Job Overview: CIMMYT is seeking a dynamic, autonomous, and service-oriented individual for the position of Cook within the corporate services program. This consultancy will be based at CIMMYT's headquarters in El Batán, Texcoco, Mexico, which is approximately 45 minutes from Mexico City. The Cook will be responsible for preparing dishes based on the weekly menu established by the kitchen supervisor, ensuring the organoleptic qualities and nutritional value of the food. The role involves preparing a variety of dishes including soups, rice, vegetarian options, main courses, light meals, gluten-free dishes, desserts, snacks, cakes, breakfasts, side dishes, and daily water, as well as meals for Cendi and after-school programs as directed by the immediate supervisor. The Cook will also prepare hot and cold beverages according to the operational needs of the area and will be responsible for washing and disinfecting fruits and vegetables, as well as performing mise en place prior to dish preparation.
Duties and Responsibilities: The Cook will have a comprehensive set of responsibilities including: preparing dishes according to the established weekly menu, ensuring the nutritional value and organoleptic qualities of the food; preparing a variety of dishes including soups, rice, vegetarian options, main courses, light meals, gluten-free dishes, desserts, snacks, cakes, breakfasts, and side dishes; performing requisitions for supplies needed for dish preparation and catering services while minimizing waste; rotating raw materials according to FIFO (First In, First Out) principles; ensuring proper storage of ingredients; quantifying portions based on nutritional value; maintaining the cold chain during food preparation; preventing cross-contamination; setting up service lines and catering services while ensuring food temperature and quality; adhering to hygiene standards as per Distintivo H; labeling products stored in refrigeration; verifying cooking temperatures; ensuring proper disinfection of fruits, vegetables, and kitchen equipment; supporting the cleaning of all food and beverage areas according to hygiene guidelines; assisting with deep cleaning of kitchen equipment and areas; managing waste disposal; supporting the operation of food and beverage areas to ensure efficient daily service; covering shifts during weekends, absences, or vacations; assisting with cash handling at various sales points; contributing to catering services before, during, and after events; actively participating in the recertification of Distintivo H, Distintivo M, and Punto Limpio; filling out required documentation for recertifications; participating in the training of new staff; and reporting any anomalies in food and beverage facilities to the immediate supervisor.
Required Qualifications: The ideal candidate must possess a bachelor's degree in gastronomy or a related field. A minimum of 2 years of verifiable experience in gastronomy is required. The candidate should have knowledge of international cuisine and familiarity with Distintivo H standards is desirable. Proficiency in Microsoft Office is necessary, and the candidate should have an intermediate level of English, with a minimum of B1 on the CEFR scale. A valid driver's license and the ability to drive are preferred. The selected individual should demonstrate competencies in communication, teamwork, customer orientation, and problem-solving.
Educational Background: Candidates must have a bachelor's degree in gastronomy or a related field, which provides the foundational knowledge and skills necessary for the culinary responsibilities of the position.
Experience: A minimum of 2 years of verifiable experience in the culinary field is required, demonstrating the ability to prepare a variety of dishes and manage kitchen operations effectively.
Languages: Intermediate proficiency in English is mandatory, with a minimum requirement of B1 on the CEFR scale. Knowledge of Spanish is also essential as it is the primary language of communication within the organization.
