Job Overview: The selected candidate will work at CIMMYT's headquarters located in Texcoco, State of Mexico, approximately 45 minutes from Mexico City. The position involves responsibilities in the kitchen area, including the preparation of dishes according to the established menu while ensuring organoleptic qualities and nutritional value. The role requires the preparation of various food items such as soups, rice, main dishes, vegetarian options, gluten-free meals, desserts, snacks, breakfasts, cakes, side dishes, and specific dishes for services like Cendi, after school programs, and catering. Additionally, the candidate will prepare hot and cold beverages as per operational needs, perform washing and disinfection of fruits and vegetables, and execute mise en place prior to dish preparation. The role also includes requisitioning raw materials according to needs, avoiding waste, and adhering to rotation standards (PEPS). Proper storage of supplies, verifying refrigeration chains, and preventing cross-contamination are also key responsibilities.
Duties and Responsibilities: The duties and responsibilities for the position include:
Preparing dishes according to the established menu, ensuring quality and nutritional standards.
Making various food preparations such as soups, rice, main dishes, vegetarian options, gluten-free meals, desserts, snacks, breakfasts, cakes, and side dishes.
Preparing hot and cold beverages as needed.
Washing and disinfecting fruits and vegetables.
Executing mise en place before dish preparation.
Requisitioning raw materials to avoid waste and following rotation standards.
Storing supplies properly and ensuring refrigeration and contamination prevention.
Quantifying portions based on nutritional value.
Setting up service lines, ensuring proper temperatures and presentation of dishes according to Distintivo H standards. 1
Decorating and serving dishes in service lines or catering. 1
Providing customer service during daily operations or special events. 1
Performing deep and surface cleaning of all food and beverage areas. 1
Operating and maintaining kitchen equipment and reporting any anomalies. 1
Cleaning designated waste areas and following safety guidelines. 1
Assisting in inventory and organization of equipment and materials. 1
Covering shifts on weekends, holidays, or during staff absences. 1
Assisting with cash handling and terminal operations. 1
Restocking refrigerators and supplying water bottles. 1
Receiving and verifying products from suppliers. 2

Filling out logs and records required for recertifications. 2
Ensuring proper disinfection of supplies, equipment, and work areas. 2

Required Qualifications: Candidates must meet the following minimum requirements, skills, and attitudes:
Completed high school / Bachelor's degree in gastronomy or related field.
Basic computer skills.
Knowledge of food and beverage preparation.
Availability to work flexible hours and rotate shifts.
Proven experience in gastronomy for at least 2 years.
Knowledge of international cuisine.
English proficiency at B1 level is an advantage.
Desirable to have a driver's license and the ability to drive. The candidate must demonstrate competencies such as Creative Thinking, Communication, Teamwork, Customer Orientation, Problem Solving, and Decision Making.
Educational Background: The educational background required for this position includes a completed high school diploma or a Bachelor's degree in gastronomy or a related field. This educational foundation is essential for understanding the principles of food preparation and kitchen management.
Experience: The position requires a minimum of 2 years of proven experience in gastronomy. This experience should encompass various aspects of kitchen operations, including food preparation, menu planning, and adherence to health and safety standards.
Languages: The mandatory language for this position is Spanish. Additionally, knowledge of English at a B1 level is considered an advantage, as it may facilitate communication in a diverse work environment.
