Job Overview: The position of Cocinero at CIMMYT is designed for a dynamic, autonomous, and service-oriented individual. The primary objective of this role is to prepare and produce food efficiently, safely, and with quality, adapting to various service formats to ensure the satisfaction of both internal and external customers. The culinary production involves preparing dishes according to established recipes and standards for each business unit. The role requires versatility in service, adapting food preparation to different environments such as quick and practical service in a food truck, balanced and nutritious meals in the dining hall, and light and varied options in the cafeteria. The Cocinero will also be responsible for controlling supplies, ensuring proper reception, storage, and rotation of raw materials while adhering to hygiene standards. Quality and presentation of food are paramount, ensuring that all dishes meet standards of taste, texture, and visual appeal. Additionally, the role emphasizes hygiene and safety, requiring compliance with food safety regulations and maintaining cleanliness in work areas. Teamwork is essential, as the Cocinero will collaborate with other cooks, assistants, and service staff to ensure smooth operations and provide excellent customer service.
Duties and Responsibilities:
Prepare and cook dishes according to established recipes and standards for each business unit.
Adapt food preparation to various service environments, ensuring efficiency and quality.
Control and manage supplies, including the reception, storage, and rotation of raw materials in compliance with hygiene standards.
Ensure that all food meets quality standards in terms of taste, texture, and presentation.
Maintain cleanliness and adhere to food safety regulations in all work areas.
Collaborate with other kitchen staff and service personnel to ensure smooth operations and customer satisfaction.
Provide excellent customer service and respond to customer needs and preferences.
Participate in team meetings and contribute to the overall improvement of kitchen operations.
Required Qualifications:
Technical degree in gastronomy or proven experience in a kitchen environment.
1-3 years of professional cooking experience, preferably in fast and collective service settings.
Knowledge of basic international and local cooking techniques.
Familiarity with food hygiene and safety standards (HACCP or similar).
Proficiency in operating kitchen equipment such as grills, ovens, fryers, and industrial coffee machines.
Strong organizational skills and ability to work quickly and efficiently.
Adaptability to different service rhythms and creativity in problem-solving.
Ability to work under pressure and maintain a positive attitude.
Educational Background: A technical degree in gastronomy is required, or equivalent proven experience in a professional kitchen setting. This educational background should provide a solid foundation in culinary techniques and food safety practices.
Experience: Candidates should have 1 to 3 years of experience in a professional kitchen, with a preference for those who have worked in fast-paced and collective service environments. This experience should demonstrate the ability to handle various cooking tasks and adapt to different service styles.
Languages: Spanish is mandatory for this position, as it is the primary language of communication within the organization and with customers. Knowledge of English or other languages would be considered an asset, enhancing communication with diverse teams and stakeholders.
