Job Overview: CIMMYT is seeking a dynamic, self-directed, and service-oriented individual for the position of Chef Pastelero for the hospitality chapter in the BSD program. This consultancy will be located at CIMMYT's headquarters in El Batán, Texcoco, Mexico, which is about 45 minutes from Mexico City. The mission of the position is to lead the production of bakery, pastry, and pizza, ensuring quality, innovation, food safety, and profitability while providing an exceptional experience to guests and residents. The Chef Pastelero will be responsible for designing and updating pastry and bakery menus and recipes, ensuring product consistency and presentation, controlling food costs, and minimizing waste. Additionally, the role involves planning daily production according to demand forecasts, training and supervising kitchen assistants, and complying with hygiene and safety standards with the goal of achieving certification. The position requires a proactive approach to managing the kitchen environment and ensuring that all products meet high standards of quality and safety.
Duties and Responsibilities: The Chef Pastelero will have a variety of responsibilities including: designing and updating pastry and bakery menus and recipes; ensuring consistency and presentation of products; controlling food costs and minimizing waste; planning daily production based on demand forecasts; training and supervising kitchen assistants; complying with hygiene and safety standards with the objective of achieving certification; verifying cleanliness and condition of equipment; reviewing production plans; initiating doughs, baking schedules, and preparations; coordinating with the service area based on expected volume; supervising replenishment of displays during service; ensuring freshness and visual appeal of products; supporting special orders; monitoring waste and opportunities for safe reuse; planning production for the following day; properly storing and labeling products (FIFO); and verifying cleanliness and reporting maintenance issues.
Required Qualifications: The required qualifications for the Chef Pastelero position include a technical degree or bachelor's degree in Gastronomy, Pastry, or related fields. Candidates should have a minimum of 3 years of experience in similar positions such as Pastry Chef, Baker, or Production Chef in high-volume hotels, restaurants, or food service environments. Basic to intermediate English language skills are desirable, and candidates must be available for rotating schedules and weekends.
Educational Background: Candidates must possess a technical or bachelor's degree in Gastronomy, Pastry, or related fields. This educational background is essential to ensure that the candidate has the necessary skills and knowledge to perform the duties of the Chef Pastelero effectively.
Experience: A minimum of 3 years of experience in similar roles is required. This experience should ideally be in high-volume settings such as hotels, restaurants, or food service operations, where the candidate has developed the skills necessary to manage production, maintain quality, and lead a team effectively.
Languages: Basic to intermediate English language skills are mandatory for this position. Proficiency in Spanish is also essential, as it is the primary language of communication within the organization and with local suppliers and staff.
